Read instructions and get ready to cook
Make Simple Syrup
In a small saucepan, combine equal parts sugar and water (1/4 cup each) and heat until sugar dissolves. Let cool completely.
Prepare the Oranges
Wash oranges thoroughly.
Zest One Orange
Using a microplane or fine grater, zest one orange, being careful to avoid the bitter white pith.
Juice the Oranges
Cut oranges in half and squeeze to extract juice. Measure out 1/4 cup.
Slice Additional Orange
Thinly slice an additional orange into 10 small, thin half-moon slices for garnish.
Combine Liquid Ingredients
In a large measuring cup or bowl with a pour spout, combine Aperol, Prosecco, orange juice, and cooled simple syrup.
Add Orange Zest
Stir orange zest into the mixture.
Stir Gently
Stir the mixture gently to combine, being careful not to agitate the Prosecco too much to preserve some carbonation.
Prepare Popsicle Molds
Place an orange slice into each of 10 popsicle molds, pressing it against the side so it will be visible.
Fill the Molds
Carefully pour the Aperol Spritz mixture into each popsicle mold, leaving about 1/4 inch of space at the top to allow for expansion during freezing.
Insert Popsicle Sticks
Place the lid on the popsicle mold and insert sticks. If your mold doesn't have a lid, freeze for 1-2 hours until partially set, then insert popsicle sticks.
Freeze
Place the filled molds in the freezer and freeze for at least 6 hours or overnight until completely solid.
Unmold the Popsicles
To remove popsicles, run the outside of the mold briefly under warm water to loosen.
Serve or Store
Serve immediately or wrap individually in parchment paper and store in a freezer-safe container.
