Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large bowl, cream the butter and brown sugar until light and fluffy.
Beat the egg and vanilla extract into the butter mixture.
In a separate bowl, whisk together the flour, oats, baking soda, cinnamon, and salt.
Gradually stir the flour mixture into the butter mixture until just combined.
Peel and finely chop the apple.
Fold the chopped apple and raisins into the cookie dough.
Drop rounded tablespoons of the dough onto the prepared baking sheets, about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden.
