Prepare Apples
Peel, core, and chop the apples into small pieces.
Cook Apples
In a skillet over medium heat, melt 1 tablespoon of butter. Add the chopped apples, 1/4 cup sugar, and 1/2 teaspoon cinnamon. Cook until apples are soft, about 5 minutes.
Prepare Cornstarch Mixture
In a small bowl, mix water and cornstarch until smooth.
Thicken Apple Mixture

Finish with Sugar and Cinnamon
Mix the remaining 1/4 cup sugar and 1/2 teaspoon cinnamon. Sprinkle over the hot chimichangas before serving.
