Steps

Read instructions and get ready to cook

1
Prepare the dry ingredients

In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.

2
Prepare the wet ingredients

In a separate bowl, beat the eggs. Melt the butter and let cool slightly. Add apple cider, milk, melted butter, and vanilla to the eggs. Whisk until well combined.

3
Combine wet and dry ingredients

Pour the wet ingredients into the dry ingredients. Stir just until combined - do not overmix. The dough will be sticky.

4
Prepare for frying

In a large, heavy pot or deep fryer, heat oil to 350°F (175°C). Use a thermometer to monitor temperature. Line a plate with paper towels for draining.

5
Prepare the cinnamon sugar

In a shallow dish, mix sugar and cinnamon. Set aside.

6
Shape the beignets

Generously flour a work surface. Turn the dough out onto the floured surface. Dust the top with more flour. Gently pat or roll the dough to 1/2-inch thickness. Cut into 2-inch squares.

7
Fry the beignets

Working in batches of 3-4, carefully drop dough squares into the hot oil. Fry for 1-2 minutes per side until golden brown and puffed. Use a slotted spoon to flip them over.

8
Drain and sugar

Remove beignets with a slotted spoon. Drain on paper towels for 30 seconds. While still warm, toss in the cinnamon sugar mixture or dust with powdered sugar.

9
Continue with remaining dough

Allow oil to return to 350°F between batches. Repeat the frying process with the remaining dough squares.

10
Serve

Arrange on a serving plate. Serve immediately while warm.
