Read instructions and get ready to cook
Cook Pasta
Cook 12 oz of spaghetti in a large pot of boiling salted water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
Cook Bacon
In a large skillet, cook 6 slices of bacon over medium heat until crispy. Transfer to a paper towel-lined plate, then chop into pieces.
Prepare Egg Mixture
In a bowl, whisk together 2 large eggs, 1 cup of grated Parmesan cheese, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Set aside.
Saute Garlic
In the same skillet used for bacon, add 1 tablespoon of olive oil and 2 minced garlic cloves. Saute for 1 minute until fragrant.
Combine Pumpkin
Stir in 1 cup of pumpkin puree into the skillet with garlic and cook for 2 minutes, stirring frequently.
Mix Pasta and Pumpkin
Add the cooked spaghetti to the skillet with the pumpkin mixture. Toss well to coat the pasta.
Add Egg Mixture
Remove the skillet from heat. Quickly pour the egg and cheese mixture over the pasta, stirring rapidly to prevent the eggs from scrambling. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Add Bacon and Serve
Stir in the chopped bacon and 1/4 cup of chopped parsley. Serve immediately, garnished with additional Parmesan cheese if desired.
