Steps

Read instructions and get ready to cook

1
Cook the bacon

In a large pot, cook the bacon over medium heat until crisp, about 8-10 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate. Reserve 2 tablespoons of the bacon fat in the pot.

2
Prepare the vegetables

Peel and chop the onion. Peel and mince the garlic cloves. Peel and cut the potatoes into 1/2-inch cubes.

3
Sauté onion and garlic

In the same pot with the reserved bacon fat, sauté the chopped onion and minced garlic until the onion is translucent and fragrant, about 5 minutes.

4
Add potatoes and broth

Add the cubed potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the potatoes are tender.

5
Blend the soup

Using an immersion blender or a regular blender, puree about half of the soup, leaving some potato chunks for texture.

6
Add cream and cheese

Stir in the heavy cream, grated cheddar cheese, salt, and black pepper. Simmer for an additional 5 minutes, or until the cheese is melted and the soup is heated through.

7
Add bacon and serve

Crumble the reserved bacon and stir it into the soup. Ladle the Bacon & Potato Soup into bowls and serve hot. Enjoy the comforting and delicious flavors of this hearty soup.
