Cook the bacon
In a large pot, cook the bacon over medium heat until crisp, about 8-10 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate. Reserve 2 tablespoons of the bacon fat in the pot.
Prepare the vegetables
Peel and chop the onion. Peel and mince the garlic cloves. Peel and cut the potatoes into 1/2-inch cubes.
Sauté onion and garlic
In the same pot with the reserved bacon fat, sauté the chopped onion and minced garlic until the onion is translucent and fragrant, about 5 minutes.
Add potatoes and broth
Add the cubed potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the potatoes are tender.
Blend the soup
Using an immersion blender or a regular blender, puree about half of the soup, leaving some potato chunks for texture.
Add cream and cheese
