Read instructions and get ready to cook
Preheat the oven
Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper. Place a wire rack on top of the baking sheet.
Prepare the onions
Peel the onions. Cut into 1/2-inch thick slices. Separate into rings, selecting the larger outer rings. Save smaller inner rings for another use.
Prepare the bacon
Cut bacon strips in half if needed to better wrap around onion rings.
Season the bacon
In a shallow dish, mix brown sugar and black pepper. Lightly press each bacon strip into the mixture to coat one side.
Wrap the onion rings
Take one onion ring. Starting at one end of a bacon strip, wrap it around the onion ring, slightly overlapping the bacon as you go. Secure with a toothpick if needed. Place on the wire rack. Repeat with remaining onion rings and bacon.
Bake the rings
Place the baking sheet with the wire rack in the preheated oven. Bake for 25-30 minutes until the bacon is crispy and fully cooked. If needed, turn on the broiler for the last 1-2 minutes to crisp up the bacon further.
Drain and cool
Remove from oven. Let cool for 5 minutes on the rack. This allows excess fat to drain and the bacon to crisp up further.
Remove toothpicks
Carefully remove any toothpicks used to secure the bacon.
Serve
Transfer to a serving plate. Serve warm.
