Preheat the oven
Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
Prepare the nut mixture
In a food processor, pulse the walnuts until finely chopped. Transfer to a bowl and mix with 1/2 cup of granulated sugar and the cinnamon.
Melt the butter
Melt the unsalted butter in a saucepan or microwave.
Assemble the baklava
Lay a sheet of phyllo dough in the greased baking dish and brush with melted butter. Repeat this process with half of the phyllo sheets, brushing each sheet with butter.
Add the nut mixture
Spread the walnut mixture evenly over the layered phyllo sheets.
Top with remaining phyllo
Continue layering the remaining phyllo sheets on top of the nut mixture, brushing each sheet with melted butter.
Cut the baklava
Using a sharp knife, cut the baklava into diamond-shaped pieces, making sure to cut through all the layers.
Bake the baklava
Bake the baklava in the preheated oven for 45-50 minutes, or until golden brown and crispy.
Prepare the syrup
While the baklava is baking, combine the remaining 1 cup of sugar, water, honey, and lemon (cut in half) in a saucepan. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes. Remove the lemon.
Pour the syrup over the baklava
Remove the baklava from the oven and immediately pour the hot syrup evenly over the top. Allow the baklava to cool completely at room temperature for several hours or overnight.
