Prepare the vegetables
Dice the onion. Mince the garlic cloves. Dice the red bell pepper.
Cook the chorizo
In a large skillet or Dutch oven, heat the olive oil over medium heat. Remove the chorizo sausage from its casing and crumble it into the skillet. Cook, stirring occasionally, until the chorizo is browned and cooked through, about 8-10 minutes.
Add the vegetables
Add the diced onion, minced garlic, and diced red bell pepper to the skillet with the chorizo. Sauté until the vegetables are softened, about 5-7 minutes.
Add the beans and seasonings
Drain and rinse the canned cannellini beans. Add the beans to the skillet, along with the chicken broth, smoked paprika, dried thyme, salt, and black pepper. Stir to combine.
Simmer the beans
Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and simmer for 15-20 minutes, or until the beans are heated through and the flavors have melded.
Serve
Remove the skillet from the heat and serve the beans with chorizo hot, garnished with chopped fresh parsley or cilantro, if desired. Enjoy this comforting and flavorful dish as a main course or a side dish!
