Read instructions and get ready to cook
Preheat Oven
Preheat your oven to 350°F (175°C).
Prepare Pumpkin
Cut the top off the pumpkin and scoop out the seeds and strings. Set aside.
Season Beef
Cut the beef into 1-inch cubes. Season with salt and pepper.
Brown Beef
In a large skillet, heat olive oil over medium-high heat. Add beef cubes and sear until browned on all sides.
Chop Vegetables
Peel and chop the carrots and onion. Slice the celery. Mince the garlic.
Sauté Vegetables
In the same skillet, add the chopped vegetables and cook until softened, about 5 minutes.
Deglaze Pan
Pour red wine into the skillet to deglaze, scraping up any browned bits from the bottom. Let simmer for 2 minutes.
Combine Ingredients in Pumpkin
Place the browned beef, sautéed vegetables, fresh thyme, and beef broth into the hollowed-out pumpkin. Stir to combine.
Bake
Place the pumpkin lid back on. Bake in the preheated oven for about 1.5 to 2 hours, or until the beef is tender and the pumpkin flesh is soft.
Serve
Carefully transfer the pumpkin to a serving dish. Scoop the stew along with some of the cooked pumpkin flesh to serve.
