Prepare beef
Slice the beef sirloin into thin strips, about 1/4 inch thick.
Season beef
Season the beef strips with salt and pepper.
Prepare vegetables
Slice the mushrooms, finely chop the onion, and mince the garlic.
Cook beef
Heat vegetable oil in a large skillet over high heat. Cook beef in batches until browned. Remove and set aside.
Sauté vegetables
In the same skillet, melt butter. Sauté onions and mushrooms until softened. Add garlic and cook for 1 minute.
Make sauce
Sprinkle flour over vegetables and stir. Gradually add beef broth, stirring constantly to prevent lumps.
Simmer sauce
Bring to a simmer and cook until sauce thickens, about 5 minutes.
Add flavorings
Stir in sour cream, Dijon mustard, and Worcestershire sauce. Mix well.
Return beef
Add the cooked beef back to the skillet. Simmer for 5 minutes.
Prepare potatoes
While the beef is cooking, peel and quarter the potatoes. Boil in salted water until tender, about 15 minutes.
Mash potatoes
Drain potatoes. Add milk and butter. Mash until smooth and creamy.
Chop parsley
Finely chop the fresh parsley.
Serve
Serve the beef stroganoff over mashed potatoes. Garnish with chopped parsley.
