Read instructions and get ready to cook
Prepare the Beef
Slice beef sirloin against the grain into thin strips. Season with salt and pepper.
Prepare the Noodles
Cook udon noodles according to package instructions, slightly undercooking them. Drain, rinse with cold water, and set aside.
Prepare the Vegetables
Slice bell peppers into strips, peel and julienne carrots, cut broccoli into florets, and slice onion.
Prepare the Aromatics
Peel and mince garlic and ginger.
Make the Sauce
In a small bowl, combine soy sauce, mirin, sesame oil, and brown sugar. Stir until sugar dissolves.
Prepare Green Onions
Thinly slice green onions, separating white and green parts.
Cook the Beef
Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. Add beef strips and stir-fry for 2-3 minutes until browned but still slightly pink inside. Remove and set aside.
Cook the Vegetables
Add remaining vegetable oil to the wok. Add onions, white parts of green onions, garlic, and ginger. Stir-fry for 30 seconds until fragrant.
Add Firm Vegetables
Add carrots and broccoli to the wok and stir-fry for 2 minutes.
Add Bell Peppers
Add bell pepper strips and stir-fry for another minute.
Return Beef to Wok
Return the cooked beef to the wok with any accumulated juices.
Add Noodles
Add the cooked udon noodles to the wok.
Add Sauce
Pour the sauce over the noodle mixture and toss everything together until well coated and heated through, about 2 minutes.
Garnish
Transfer to a serving plate. Sprinkle with sesame seeds and green parts of green onions.
Serve
Serve immediately while hot.
