Steps
Read instructions and get ready to cook
Preheat Oven
Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
Prepare the Beets
Wash and peel 4 whole beets. Using a mandoline or a sharp knife, slice the beets very thinly, aiming for uniform thickness to ensure even baking.
Season the Beet Slices
In a large bowl, toss the beet slices with 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until evenly coated.
Arrange on Baking Sheets
Spread the beet slices in a single layer on the prepared baking sheets, making sure they don't overlap.
Bake
Bake in the preheated oven for 20-25 minutes, or until the edges of the beet slices start to dry out and curl up. Flip the slices halfway through baking to ensure they crisp up evenly.
Cool and Serve
Remove the beet chips from the oven and let them cool on the baking sheets for a few minutes. They will continue to crisp up as they cool. Serve immediately or store in an airtight container for later.
