Preheat Oven

Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.

Prepare the Beets

Wash and peel 4 whole beets. Using a mandoline or a sharp knife, slice the beets very thinly, aiming for uniform thickness to ensure even baking.

Season the Beet Slices

In a large bowl, toss the beet slices with 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until evenly coated.

Arrange on Baking Sheets

Spread the beet slices in a single layer on the prepared baking sheets, making sure they don't overlap.
