Steps

Preheat oven
Preheat the oven to 375°F (190°C).
Prepare bell peppers
Wash the bell peppers, cut them in half lengthwise, and remove seeds and membranes.
Arrange peppers
Place the bell pepper halves on a baking sheet lined with parchment paper.
Brush with oil
Lightly brush the inside of each pepper half with olive oil.
Dice ham
Finely dice the ham into small cubes.
Prepare egg mixture
In a bowl, whisk together eggs, milk, salt, and black pepper.
Add cheese and ham
Stir grated cheddar cheese and diced ham into the egg mixture.
Fill peppers
Carefully pour the egg mixture into each bell pepper half, filling them about 3/4 full.
Bake
Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until eggs are set and slightly puffed.
Check doneness
The egg boats are done when the eggs are no longer jiggly and the cheese is melted and slightly golden.
Chop chives
While the egg boats are baking, finely chop the fresh chives.
