Steps

Read instructions and get ready to cook

1
Preheat the oven

Preheat the oven to 325°F (165°C).

2
Prepare the Cajun seasoning

In a small bowl, mix together the paprika, cayenne pepper, thyme, oregano, salt, and black pepper.

3
Prepare the turkey

Remove the giblets from the turkey cavity and pat the turkey dry with paper towels. Rub the softened butter all over the turkey, including under the skin. Sprinkle the Cajun seasoning evenly over the turkey and rub it into the skin.

4
Stuff the turkey

Cut the onion and celery into large chunks. Stuff the turkey cavity with the onion and celery chunks.

5
Roast the turkey

Place the seasoned turkey on a rack in a roasting pan. Roast the turkey in the preheated oven for about 3 hours, or until the internal temperature of the thickest part of the thigh reaches 165°F (74°C).

6
Prepare the gravy

Remove the turkey from the roasting pan and let it rest. Pour the pan drippings into a saucepan. Whisk in the flour and cook over medium heat for 1-2 minutes. Gradually whisk in the chicken stock and heavy cream. Simmer the gravy, stirring occasionally, until thickened, about 5 minutes. Season with additional Cajun seasoning to taste.

7
Carve and serve

Carve the roasted turkey and serve hot with the Cajun gravy on the side.
