Prepare the crust

Preheat the oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs and melted unsalted butter until well combined. Press the mixture into the bottom and up the sides of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

Make the cheesecake filling

In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Prepare the apple crumble

Peel, core, and chop the apples into small pieces. In a separate bowl, mix the chopped apples, brown sugar, all-purpose flour, cinnamon, and remaining melted unsalted butter until the apples are evenly coated.

Assemble the cheesecake

Pour half of the cheesecake filling into the cooled crust. Spoon half of the apple crumble mixture evenly over the filling. Pour the remaining cheesecake filling over the apples, then top with the remaining apple crumble mixture.

Bake and cool

Bake the cheesecake for 1 hour and 15 minutes or until the center is almost set. Turn off the oven and leave the cheesecake inside for another 30 minutes with the door slightly ajar. Remove the cheesecake from the oven and let it cool completely at room temperature. Refrigerate for at least 4 hours or overnight before serving.
