Read instructions and get ready to cook
Prepare ingredients
Slice onions thinly. Mince garlic. Chop sun-dried tomatoes if not already sliced.
Caramelize onions
Heat olive oil in a large skillet over medium-low heat. Add onions and cook, stirring occasionally, for 30-35 minutes until deeply caramelized.
Cook pasta
While onions are cooking, bring a large pot of salted water to boil. Cook pasta according to package instructions until al dente.
Add garlic and tomatoes
Once onions are caramelized, add minced garlic and sun-dried tomatoes. Cook for 2-3 minutes.
Deglaze pan
Add balsamic vinegar to the skillet, stirring to scrape up any browned bits from the bottom of the pan.
Combine pasta and sauce
Drain pasta, reserving 1/2 cup of pasta water. Add pasta to the skillet with the onion mixture. Toss to combine, adding pasta water as needed for desired consistency.
Add cheese and season
