Grate cauliflower

Remove the leaves and stem from the cauliflower. Grate the cauliflower florets using a box grater or food processor until you have about 4 cups of grated cauliflower.

Microwave cauliflower

Place the grated cauliflower in a microwave-safe bowl. Microwave on high for 5 minutes, stirring halfway through.

Let the cauliflower cool slightly, then transfer it to a clean kitchen towel. Wrap the towel around the cauliflower and squeeze out as much excess moisture as possible.

In a large bowl, mix together the drained cauliflower, cheddar cheese, eggs, almond flour, onion powder, garlic powder, salt, and black pepper until well combined.

Divide the mixture into 8 equal portions. Shape each portion into a patty about 1/2 inch thick.
