Read instructions and get ready to cook
Preheat the oven
Preheat the oven to 400°F (200°C).
Prepare the cauliflower
Cut 1 large head of cauliflower into florets and place them on a baking sheet. Drizzle with 2 tablespoons of olive oil and toss to coat.
Roast the cauliflower
Roast the cauliflower in the preheated oven for 25-30 minutes, or until tender and lightly caramelized, stirring halfway through.
Prepare the garlic
While the cauliflower is roasting, mince 3 cloves of garlic.
Blend the ingredients
In a food processor or blender, combine the roasted cauliflower, 1/4 cup of tahini, the juice of 1 large lemon, minced garlic, remaining 2 tablespoons of olive oil, 1 teaspoon of cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of smoked paprika. Blend until smooth and creamy.
Adjust consistency
If the hummus is too thick, add water, 1 tablespoon at a time, until the desired consistency is reached.
Adjust seasoning
Taste the cauliflower hummus and adjust the seasoning as needed, adding more salt, lemon juice, or spices to taste.
Serve
Transfer the cauliflower hummus to a serving bowl. Serve the dip chilled or at room temperature with pita bread, crackers, or fresh vegetables for dipping.
