Prepare the fish

Pat 4 tilapia fillets dry with paper towels. Season both sides with 1 tsp salt and ½ tsp black pepper.

Preheat oven

Preheat oven to 400°F (200°C). Lightly oil a baking dish with 1 tbsp olive oil.

Prep aromatics

Peel and mince 3 garlic cloves. Chop 2 tbsp fresh parsley.

Make cheese sauce base

Heat 1 tbsp olive oil in a saucepan over medium heat. Add minced garlic and sauté for 1 minute. Stir in 2 tbsp flour, cooking 1 minute. Slowly whisk in 1 cup milk until smooth and thickened.

Grate cheeses

Grate 2 oz Parmesan and 4 oz mozzarella using a box grater.

Finish sauce

Stir grated Parmesan into sauce until melted. Squeeze juice from 1 lemon into sauce. Taste and adjust seasoning.

Place seasoned tilapia fillets into baking dish. Pour garlic-Parmesan sauce over fillets. Sprinkle grated mozzarella evenly on top.

Bake uncovered for 18–20 minutes until fish flakes easily and cheese is bubbly golden.

Top with chopped parsley. Serve hot with rice, potatoes, or steamed vegetables.
