Preheat the oven

Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Bake the wonton wrappers

Arrange the wonton wrappers in a single layer on the prepared baking sheet. Bake for 5-7 minutes, or until crispy and lightly golden brown. Remove from the oven and set aside.

Cook the ground beef

In a large skillet over medium-high heat, cook the ground beef until browned and cooked through, breaking it up with a wooden spoon as it cooks. Drain any excess fat.

Add beans and seasoning

Drain and rinse the black beans. Add them to the skillet with the cooked ground beef. Stir in the taco seasoning mix and cook for 1-2 minutes, or until heated through.

Assemble the nachos

Arrange the crispy wonton wrappers on a large oven-safe platter or baking sheet. Top with the ground beef and black bean mixture. Sprinkle the shredded cheddar cheese and Monterey Jack cheese evenly over the top.

While the nachos are baking, dice the tomatoes and thinly slice the jalapeño peppers (remove seeds for less heat, if desired). Once the nachos are out of the oven, top them with the diced tomatoes and sliced jalapeños.
