Read instructions and get ready to cook
Prepare ingredients
Gather all ingredients. Preheat oven to 375°F (190°C).
Set up breading station
Set up 3 shallow dishes. Put flour in one. Beat eggs in the second. Mix breadcrumbs, 1/2 cup parmesan, 1/2 tsp salt and 1/4 tsp pepper in the third.
Bread the chicken
Dip each chicken breast in flour, then egg, then breadcrumb mixture, pressing to coat well. Place on plate.
Fry the chicken
In a large skillet, heat olive oil over medium-high heat. Add breaded chicken and cook until golden, 2-3 min per side. Transfer to a baking dish.
Make the sauce
Mince garlic. In a bowl, mix tomato sauce, garlic, Italian seasoning, 1/2 tsp salt and 1/4 tsp pepper.
Assemble and bake
Spoon sauce over chicken. Top with mozzarella and remaining parmesan. Bake until cheese is melted and bubbly, 25-30 min. Let rest 5 min before serving.
