Read instructions and get ready to cook
Clean chicken
Rinse the chicken under cold water and remove any giblets or excess fat.
Chop vegetables
Peel and cut the carrots and parsley root into 1-inch pieces. Cut the celery stalks into 1-inch pieces. Peel and quarter the onions.
Place ingredients in pot
Place the chicken in a large pot. Add the chopped vegetables, bay leaves, black peppercorns, and salt.
Add water
Pour the water into the pot, ensuring that the chicken and vegetables are fully submerged.
Bring to a boil
Bring the mixture to a boil over high heat. Reduce the heat to low and skim off any foam that rises to the surface.
Simmer soup
Cover the pot and let the soup simmer for 1 hour or until the chicken is cooked through and the vegetables are tender.
Remove chicken

Strain broth
Strain the broth through a fine-mesh sieve into another pot, discarding the vegetables and spices.
Shred chicken

Cook pasta or rice
Return the strained broth to the heat and bring it to a boil. Add the small pasta or rice and cook until tender, following the package instructions.
Add shredded chicken
Add the shredded chicken to the pot and stir to combine.
Serve
Serve the Balkan Chicken Soup hot, garnished with fresh parsley if desired.
