Prep Sweet Potatoes
Preheat the oven to 400°F (200°C). Clean the sweet potatoes and prick them several times with a fork. Brush them with 2 tablespoons of olive oil and place on a baking sheet. Bake for 45 minutes, or until tender.
Prepare Chickpea Mixture
While the sweet potatoes are baking, rinse and drain the chickpeas. Dice the onion. Mince the garlic cloves.
Sauté Onion and Garlic
