Prepare cherry wine reduction
In a saucepan, combine red wine and frozen cherries. Simmer until reduced by half, about 15 minutes. Strain and set aside to cool.
Mix dry ingredients
In a bowl, whisk together sugar, cocoa powder, and salt.
Heat cream and milk
In a medium saucepan, heat heavy cream and whole milk until just simmering.
Temper egg yolks
