Read instructions and get ready to cook
Heat milk, cream, and sugar
In a saucepan, combine milk, cream, and sugar. Heat over medium heat, stirring occasionally, until steaming and the sugar has dissolved.
Chop chocolate
While the milk mixture heats, finely chop the dark chocolate.
Add chocolate
Remove the milk mixture from the heat and add the chopped chocolate. Whisk until the chocolate has melted and the mixture is smooth.
Temper egg yolks
In a bowl, whisk egg yolks. Slowly pour about 1 cup of the hot chocolate mixture into the yolks, whisking constantly to temper them.
Combine mixtures
Pour the tempered egg yolk mixture back into the saucepan, whisking constantly.
Cook custard
Cook the custard over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 5-7 minutes. Do not let it boil.
Add vanilla and salt
Remove the custard from the heat and stir in vanilla extract and salt.
Strain custard
Strain the custard through a fine-mesh sieve into a clean bowl to remove any lumps.
Chill custard
Cover the surface of the custard with plastic wrap to prevent a skin from forming. Refrigerate for at least 2 hours, or until thoroughly chilled.
Serve
Spoon the chocolate custard into individual serving dishes and serve chilled.
