Read instructions and get ready to cook
Whisk Yolks with Sugar
In a bowl, whisk egg yolks with sugar until pale and thick.
Add Cocoa, Cornstarch, Espresso
Whisk in cocoa, cornstarch, and espresso powder until smooth.
Heat the Milk
In a saucepan, heat milk until steaming but not boiling.
Temper and Combine
Slowly whisk hot milk into egg mixture to temper. Then return to saucepan.
Cook Until Thick
Cook over medium heat, stirring constantly, until thick and pudding-like, about 4 - 5 minutes.
Add Chocolate and Butter
Remove from heat. Stir in chopped dark chocolate and butter until melted.
Stir in Vanilla and Salt
Add vanilla and sea salt. Stir well.
Chill and Serve
Pour into cups. Cover with plastic wrap on the surface and chill at least 2 hours.
