Mix dry ingredients
In a large mixing bowl, whisk together the cocoa powder, sugar, and salt.
Blend with milk
Gradually add the milk to the dry ingredients, whisking constantly to avoid lumps.
Heat the mixture
Transfer the mixture to a saucepan and cook over medium heat until it just begins to bubble around the edges.
Chop chocolate

Melt chocolate

Temper egg yolks

Freeze
Pour the chilled mixture into a shallow dish and place it in the freezer. Stir every 30 minutes until it reaches a creamy, frozen consistency, about 2-3 hours.
