Read instructions and get ready to cook
Prepare oven
Preheat the oven to 325°F (165°C).
Make crust
Crush graham crackers into fine crumbs. Mix with melted butter and 1/4 cup sugar.
Form crust
Press the mixture into the bottom of a 9-inch springform pan.
Bake crust
Bake the crust for 10 minutes, then remove from oven and let cool.
Prepare filling
In a large bowl, beat cream cheese until smooth.
Add sugar
Gradually add the remaining sugar to the cream cheese, beating until combined.
Add eggs
Beat in eggs one at a time, mixing on low speed.
Add remaining ingredients
Stir in heavy cream, sour cream, vanilla extract, salt, and flour until just combined.
Pour filling
Pour the filling over the cooled crust in the springform pan.
Prepare water bath
Wrap the outside of the pan in aluminum foil. Place in a larger baking pan and add hot water to come halfway up the sides of the springform pan.
Bake cheesecake
Bake for 1 hour and 30 minutes, or until center is almost set.
Cool in oven
Turn off the oven and leave the cheesecake inside with the door closed for 1 hour.
Refrigerate
Remove from oven, run a knife around the edge, and refrigerate for at least 4 hours or overnight.
Serve
Remove from springform pan, slice, and serve chilled.
