Preheat Oven
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.
Mix Dry Ingredients
In a large bowl, sift together 1 3/4 cups of all-purpose flour, 1/2 cup of cocoa powder, 2 teaspoons of baking powder, and 1/4 teaspoon of salt.
Combine Wet Ingredients
In another bowl, whisk together 1 cup of milk, 1/2 cup of vegetable oil, 2 eggs, and 1 teaspoon of vanilla extract until well combined.
Mix Wet and Dry Ingredients
Pour the wet ingredients into the dry ingredients. Add 1 cup of granulated sugar. Stir until just combined, being careful not to overmix.
Fill Muffin Cups
Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
Bake
Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool and Serve
Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
