Preheat the oven
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix the dry ingredients
In a medium bowl, whisk together the flour, baking powder, and salt.
Cream the butter and sugar
In a large bowl, beat the butter and granulated sugar with an electric mixer until light and fluffy.
Add the eggs and vanilla
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Alternate adding dry ingredients and coconut milk
Gradually add the dry ingredients to the butter mixture, alternating with the coconut milk, and mix until just combined.
Fold in the coconut
Fold in 1 cup of the shredded coconut until evenly distributed.
Bake the cakes
Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then remove them from the pans and cool completely on wire racks.
Prepare the frosting
In a large bowl, beat the heavy cream and powdered sugar with an electric mixer until stiff peaks form. Fold in the remaining 1 cup of shredded coconut.
Assemble the cake
Place one cake layer on a serving plate and spread half of the coconut frosting on top. Place the second cake layer on top and spread the remaining frosting over the top and sides of the cake.
