Preheat the oven

Preheat the oven to 325°F (165°C).

Season the short ribs

Season the beef short ribs generously with salt and black pepper on all sides.

Brown the short ribs

In a large Dutch oven, heat the olive oil over medium-high heat. Working in batches, brown the short ribs on all sides, about 8-10 minutes per batch. Remove the browned short ribs and set aside.

Prepare the vegetables

Dice the onion, carrots, and celery stalks. Mince the garlic cloves.

Sauté the vegetables

In the same Dutch oven, reduce the heat to medium and add the diced onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

Add tomato paste and coffee

Stir in the tomato paste and cook for 1-2 minutes. Pour in the strong brewed coffee and beef broth, scraping up any browned bits from the bottom of the pot.

Add herbs and short ribs

Add the bay leaves and fresh thyme sprigs to the pot. Return the browned short ribs to the pot, nestling them into the liquid.

Braise the short ribs

Cover the Dutch oven with a tight-fitting lid and transfer it to the preheated oven. Braise the short ribs for 2 1/2 to 3 hours, or until they are tender and falling off the bone.

Serve

Remove the Dutch oven from the oven and let the short ribs rest for 10 minutes. Serve the coffee-braised short ribs hot, with the braising liquid spooned over the top. Enjoy the rich, tender meat and the deeply flavorful sauce!
