Prepare the arepa dough
In a medium bowl, combine white corn meal, water, and salt. Mix until a smooth dough forms. Let rest for 5 minutes.
Form the arepas
Divide the dough into 4 equal portions. Roll each portion into a ball. Flatten between your palms to form discs about 1/2-inch thick and 4 inches in diameter.
Cook the arepas
Heat oil in a large skillet over medium heat. Add the arepas and cook for 5-7 minutes on each side until golden brown and crispy. The arepas should sound hollow when tapped.
Cook the chorizo
In another skillet, cook chorizo over medium heat for 8-10 minutes, turning occasionally. Once cooked through, slice into rounds.
Prepare the eggs
In a bowl, beat eggs with milk and salt.
Cook the eggs
Melt butter in a non-stick skillet over medium-low heat. Pour in the egg mixture. Cook, stirring gently, until eggs are soft and just set, about 2-3 minutes.

Place 2 arepas on each plate. Top with scrambled eggs. Arrange chorizo slices alongside. Sprinkle with cheese.
