Read instructions and get ready to cook
Crush cookies
Place chocolate sandwich cookies in a food processor and pulse until finely crushed.
Mix cookie crumbs and cream cheese
In a large bowl, mix softened cream cheese and crushed cookie crumbs until well combined.
Shape truffles
Using a small cookie scoop or your hands, shape the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
Chill truffles
Refrigerate the truffles for at least 1 hour or until firm.
Melt white chocolate
In a microwave-safe bowl, melt white chocolate chips in 30-second intervals, stirring between each interval, until smooth.
Dip truffles in chocolate
Using a fork, dip each chilled truffle into the melted white chocolate, allowing excess chocolate to drip off. Place the coated truffles back on the parchment paper.
Decorate truffles
Sprinkle reserved cookie crumbs over the top of each truffle before the chocolate sets.
Chill and serve
Refrigerate the truffles for another 30 minutes or until the chocolate has set. Serve chilled.
