Read instructions and get ready to cook
Preheat oven
Preheat the oven to 350°F (175°C).
Make caramel sauce
In a saucepan, cook sugar over medium heat, stirring constantly, until it melts and turns amber in color. Pour the caramel into a 9-inch round baking dish, swirling to coat the bottom evenly. Set aside.
Blend ingredients
In a blender, combine cream cheese, sweetened condensed milk, evaporated milk, eggs, and vanilla extract. Blend until smooth.
Pour mixture into dish
Pour the blended mixture into the prepared baking dish with the caramel.
Prepare water bath
Place the baking dish in a larger roasting pan. Fill the roasting pan with hot water until it reaches halfway up the sides of the baking dish.
Bake flan
Bake for 60 minutes, or until the center is set but still slightly jiggly.
Cool and chill
Remove the flan from the water bath and let cool to room temperature. Refrigerate for at least 4 hours, or until completely chilled.
Unmold and serve
To serve, run a knife around the edge of the flan. Place a serving plate on top of the baking dish and invert the flan onto the plate. The caramel sauce will flow over the flan.
