Whisk egg yolks and sugar

In a medium bowl, vigorously whisk together the egg yolks and sugar until smooth and light in color.

Heat milk and cream

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat, stirring occasionally, until steaming hot but not boiling.

Temper egg mixture

Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to avoid scrambling the eggs.

Cook the eggnog

Return the mixture to the saucepan. Cook over low heat, stirring constantly, until thickened and coats the back of a spoon, about 5-7 minutes. Do not let it boil.

Strain and cool

Remove from heat and strain through a fine mesh sieve into a bowl. Stir in the nutmeg. Let cool to room temperature.

Add bourbon and chill

Whisk in the bourbon. Cover and refrigerate until well chilled, at least 2 hours or overnight.
