Read instructions and get ready to cook
Prepare the mushrooms
Clean mushrooms by wiping with a damp paper towel. Slice mushrooms into even pieces.
Prepare the aromatics
Peel and finely dice the onion. Peel and mince the garlic.
Sauté the vegetables
In a large pot, melt butter over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
Cook the mushrooms
Add sliced mushrooms to the pot. Cook for 5-7 minutes, stirring occasionally, until mushrooms have released their liquid and begun to brown.
Add the flour
Sprinkle flour over the mushrooms. Stir continuously for 1-2 minutes to cook the flour.
Add liquid and seasonings
Slowly pour in vegetable broth while stirring. Add thyme, salt, and pepper. Bring to a simmer.
Simmer the soup
Reduce heat to low. Simmer for 15 minutes, stirring occasionally.
Blend the soup (optional)
For a smoother soup, use an immersion blender to partially blend the soup. Alternatively, transfer half the soup to a blender, blend until smooth, then return to the pot. For a chunky soup, skip this step.
Add the cream
Stir in the cream. Heat through without boiling.
Adjust seasoning
Taste and adjust salt and pepper if needed.
Serve
Ladle into bowls. Serve hot with crusty bread if desired.
