Prepare the onions
Peel the onions and slice them into 1/2-inch thick rings. Separate the rings and set aside.
Make the batter
In a large bowl, whisk together the flour, baking powder, salt, black pepper, and paprika. In a separate bowl, beat the eggs and milk together. Pour the egg mixture into the flour mixture and whisk until smooth.
Heat the oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 375°F (190°C).
Coat the onion rings
Dip each onion ring into the batter, making sure it's evenly coated. Shake off any excess batter.
Fry the onion rings
Carefully place the battered onion rings into the hot oil. Fry them in batches, turning occasionally, until they are golden brown and crispy, about 2-3 minutes per batch. Remove the fried onion rings with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Serve
Sprinkle the onion rings with a little extra salt, if desired. Serve hot with your favorite dipping sauce, such as ranch or ketchup. Enjoy your delicious homemade onion rings!
