Soak the cashews

Place cashews in a bowl. Cover with hot water. Let soak for at least 30 minutes (or overnight in the refrigerator).

Drain the cashews

Drain the soaked cashews. Rinse thoroughly with fresh water.

Prepare the lemon

Cut the lemon in half. Squeeze to extract 2 tablespoons of juice.

Prepare the garlic

Peel the garlic cloves.

Remove stem. For less heat, remove seeds and membranes. Roughly chop.

Wash thoroughly. Remove core. Roughly chop.

Remove stem and seeds. Roughly chop.

Add drained cashews, water, and peeled garlic to a high-speed blender. Blend on high for 2 minutes until completely smooth.

Add remaining ingredients

Add all remaining ingredients including lemon juice, chopped jalapeño, tomato, and bell pepper to the blender.

Final blending

Blend on high for 1-2 minutes until completely smooth. Stop occasionally to scrape down the sides if needed.

Check consistency

If the queso is too thick, add 1-2 tablespoons of water. Blend again until desired consistency is reached.

Taste and adjust

Taste the queso. Add more salt, nutritional yeast, or spices if needed. Blend briefly to incorporate any additions.

Transfer to a small saucepan Heat over low heat for 3-5 minutes, stirring frequently. Alternatively, serve at room temperature.
