1
Prepare the potatoes

Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15 minutes. Drain and mash the potatoes until smooth. Let cool slightly.

2
Prepare the shrimp

Peel, devein, and chop the shrimp into small pieces. Thinly slice the scallions and mince the garlic.

3
Mix the ingredients

In a large bowl, combine the mashed potatoes, chopped shrimp, sliced scallions, minced garlic, salt, black pepper, and paprika. Mix well.

4
Shape the balls

In a shallow dish, beat the eggs. Place the breadcrumbs in another shallow dish. Shape the potato mixture into 1 1/2-inch balls. Dip each ball into the beaten eggs, then coat with breadcrumbs.

5
Fry the balls

Heat the vegetable oil in a deep pot or fryer to 350°F (175°C). Fry the potato balls in batches for 3-4 minutes, or until golden brown and crispy. Drain on a paper towel-lined plate.

6
Serve and enjoy
