Preheat the Oven
Preheat oven to 375°F (190°C).
Prepare the Artichokes
Cut off the top 1/3 of each artichoke and trim the stem to create a flat bottom so they can stand upright.
Trim the Leaves
Using kitchen scissors, trim the sharp tips off the outer leaves.
Prepare the Lemons
Cut one lemon in half, then cut one half into 4 thin slices. Set aside the remaining lemon and a half.
Rub with Lemon
Rub the cut surfaces of the artichokes with a lemon half to prevent browning.
Prepare the Garlic
Peel and thinly slice the garlic cloves.
Create Garlic Pockets
Gently separate the artichoke leaves slightly and insert garlic slices between leaves, distributing evenly among all artichokes.
Season the Artichokes
In a small bowl, mix olive oil, salt, pepper, and dried oregano.
Apply Seasoning
Brush the seasoned olive oil mixture over and between the leaves of each artichoke.
Prepare Fresh Thyme
Strip thyme leaves from stems and sprinkle over the artichokes.
Prepare Baking Dish
Pour vegetable broth into a baking dish large enough to hold all artichokes upright.
Add Lemon Slices
Place a lemon slice on top of each artichoke, gently pressing it down slightly.
Arrange Artichokes
Place the prepared artichokes upright in the baking dish with broth.
Cover for Baking
Cover the baking dish tightly with aluminum foil.
Bake Covered
Bake covered for 35 minutes.
Uncover and Continue Baking
Remove foil and bake for an additional 10 minutes until leaves are easily pulled away.
Prepare Serving Lemon
Cut the remaining lemon into wedges for serving.
Check Doneness
Test for doneness by pulling on an outer leaf - it should come away easily.
Serve
Transfer artichokes to serving plates, drizzling with some of the cooking liquid from the baking dish.
