Prepare the Chicken Mixture
In a large bowl, combine ground chicken, breadcrumbs, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and paprika.
Prepare the Aromatics

Cook Chicken Patties
Heat remaining tablespoon of olive oil in a large skillet over medium heat. Cook chicken patties for 4-5 minutes per side until golden brown and cooked through (internal temperature of 165°F).
Add Cheese
During the last minute of cooking, place a slice of cheese on each patty and cover the skillet to help cheese melt.
Cook the Eggs
In another skillet, melt 1 tablespoon butter over medium heat. Crack eggs into the skillet and cook to your preference (sunny-side up or over-easy recommended for runny yolks).
Season the Eggs
Season eggs with remaining salt and pepper.
Prepare the Sauce
In a small bowl, mix mayonnaise and hot sauce.
Toast the Buns
