Read instructions and get ready to cook
Drain and rinse chickpeas
Drain and rinse the canned chickpeas. Pat them dry with a clean kitchen towel or paper towels.
Prepare the vegetables
Peel and roughly chop the red onion. Peel the garlic cloves. Roughly chop the parsley and cilantro.
Process the falafel mixture
In a food processor, combine the chickpeas, chopped onion, garlic, parsley, cilantro, cumin, coriander, salt, and black pepper. Pulse until the mixture is well combined and resembles a coarse paste.
Add baking powder and flour
Transfer the falafel mixture to a large bowl. Stir in the baking powder and all-purpose flour until well combined.
Preheat the waffle iron
Preheat your waffle iron according to the manufacturer's instructions.
Cook the falafel waffles
Grease the waffle iron with cooking spray. Scoop about 1/2 cup of the falafel mixture onto the center of the waffle iron. Close the lid and cook for 5-7 minutes or until the waffle is golden brown and crispy. Repeat with the remaining mixture.
Prepare the tahini sauce
In a small bowl, whisk together the tahini and juice from the lemon. If the sauce is too thick, add water, 1 tablespoon at a time, until it reaches your desired consistency.
Serve
Serve the hot falafel waffles with the tahini sauce on the side. Enjoy!
