Read instructions and get ready to cook
Cook farro
Rinse the farro and place it in a medium saucepan with 3 cups of water. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until tender. Drain any excess water and set aside to cool.
Cook lentils
Rinse the lentils and place them in a separate saucepan with 2 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until tender. Drain any excess water and set aside to cool.
Prepare vegetables
Halve the cherry tomatoes. Dice the cucumber. Finely chop the red onion and parsley.
Make dressing
In a small bowl, whisk together the juice of the lemon, olive oil, Dijon mustard, salt, and black pepper.
Combine ingredients
In a large bowl, combine the cooked farro, cooked lentils, halved cherry tomatoes, diced cucumber, chopped red onion, and chopped parsley.
