Preheat oven

Preheat the oven to 375°F (190°C).

Clean and slice leeks

Cut off the dark green tops and root ends of the leeks. Slice the leeks in half lengthwise and rinse well under running water to remove any dirt. Thinly slice the leeks.

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced leeks and sauté for 8-10 minutes or until softened and lightly caramelized.

Crumble feta cheese

Crumble the feta cheese into small pieces.

Chop dill

Finely chop the fresh dill.

In a bowl, mix the sautéed leeks, crumbled feta cheese, chopped dill, salt, and black pepper.

In a separate bowl, beat the eggs until well combined.

Cut filo sheets

Unroll the filo pastry and cut it into 3-inch wide strips.

Continue folding the triangle along the strip until you reach the end. Brush the end with beaten egg to seal. Repeat with the remaining filo strips and filling.
