Read instructions and get ready to cook
Prepare steaks
Pat steaks dry with paper towels. Season both sides with salt.
Crush peppercorns
Coarsely crush peppercorns using a mortar and pestle or the bottom of a heavy pan.
Coat steaks
Press crushed peppercorns onto both sides of the steaks.
Heat pan
In a skillet over medium-high heat, melt 1 tablespoon butter with olive oil.
Cook steaks
Add steaks to the pan and cook for 3-4 minutes per side for medium-rare. Remove and set aside.
Prepare sauce base
In the same pan, add finely chopped shallot and cook for 1 minute.
Add cognac
Remove pan from heat, add cognac, and carefully ignite with a long match. When flames subside, return to heat.
Finish sauce
Add cream and beef broth. Simmer until sauce thickens, about 5 minutes.
Add final butter
Remove from heat and swirl in remaining butter.
Serve
Place steaks on plates and spoon sauce over them. Serve immediately.
