Steps

Read instructions and get ready to cook

1
Cook the lo mein noodles

Cook the lo mein noodles according to the package instructions until al dente. Drain and rinse the noodles under cold water to stop the cooking process. Set aside.

2
Prepare the vegetables

Cut the broccoli into small florets. Peel and julienne the carrots. Slice the red and yellow bell peppers into thin strips. Cut the zucchini into half-moons. Mince the garlic cloves. Peel and mince the ginger.

3
Make the sauce

In a small bowl, whisk together the soy sauce, rice vinegar, and sesame oil until well combined. Set aside.

4
Stir-fry the vegetables

Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and ginger and stir-fry for 30 seconds. Add the broccoli, carrots, bell peppers, and zucchini. Stir-fry for 5-7 minutes, or until the vegetables are crisp-tender.

5
Add the noodles and sauce

Add the cooked lo mein noodles to the wok with the vegetables. Pour the sauce over the noodles and vegetables. Toss everything together until the noodles and vegetables are evenly coated with the sauce and heated through, about 2-3 minutes.

6
Serve

Divide the garden lo mein among 4 serving plates or bowls. Serve hot, garnished with sesame seeds or chopped green onions, if desired. Enjoy the vibrant colors, textures, and flavors of this healthy and delicious Chinese-inspired dish!
