Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray.

Prepare the potatoes

Wash and peel the russet potatoes. Using a mandoline or a sharp knife, slice the potatoes into thin rounds, about 1/8-inch thick.

Melt the butter

In a small saucepan, melt the unsalted butter over low heat.

Mince the garlic cloves and add them to the melted butter. Stir in the grated Parmesan cheese, fresh thyme leaves, salt, and black pepper. Mix until well combined.
