Prepare the cauliflower rice

Remove the leaves and stem from the cauliflower head. Cut the cauliflower into florets and pulse them in a food processor until they resemble rice-sized pieces.

Cook the pork

Cut the pork tenderloin into small, bite-sized pieces. Heat 1/2 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the pork and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.

Prepare the vegetables

Mince the garlic cloves. Peel and dice the carrot. Slice the green onions, separating the white and green parts.

Cook the vegetables

In the same skillet, heat the remaining 1/2 tablespoon of sesame oil. Add the minced garlic and white parts of the green onions. Sauté for 1-2 minutes until fragrant. Add the diced carrot and cook for another 2-3 minutes until slightly softened.

Add the cauliflower rice

Add the cauliflower rice to the skillet. Stir-fry for 3-4 minutes until the cauliflower is tender but not mushy.

Return the cooked pork to the skillet. Add the soy sauce, salt, and black pepper. Stir well to combine and cook for another 2-3 minutes.

Push the cauliflower rice mixture to one side of the skillet. Crack the eggs into the empty space and scramble them until cooked through. Mix the scrambled eggs with the cauliflower rice.
