Preheat Oven

Preheat the oven to 400°F (200°C).

Prepare garlic

Cut the top off the head of garlic, exposing the cloves. Place the garlic head on a piece of aluminum foil, drizzle with olive oil, and wrap tightly.

Roast garlic

Place the wrapped garlic head in the preheated oven and roast for 35-40 minutes, or until the cloves are tender and golden brown.

Prepare potatoes

While the garlic roasts, peel the potatoes and cut them into 1-inch chunks.

Boil potatoes

Place the potato chunks in a large pot and cover with cold water. Bring to a boil over high heat, then reduce heat to medium and simmer until the potatoes are tender, about 15-20 minutes.
